blue, orange and red is documented in map key pdf, but gray hatching appearing for example for https://www.openstreetmap.org/way/31925780#map=18/50.05575/19.85285 is not explained.

It’s just highway=pedestrian and similar, no restriction.
As with all other common highways (non hiking/cycling) it’s not explained in the key, there are just too many elements to make the key in two languages and keep it up to date.
